2 medium Granny Smith apples, peeled and diced small
1 large yellow onion, finely chopped
3 stalks celery, sliced thinly

1 tbsp fresh thyme, leaves stripped
3 tbsp olive oil
1 tsp sea salt
0.5 tsp freshly cracked black pepper


Instructions

Preheat your oven to 375 degrees Fahrenheit.
Grease a 9×13 inch baking dish lightly with olive oil.
Spread bread cubes on a baking sheet and toast for 10 minutes until golden and dry.
Heat olive oil in a large skillet over medium heat.
Sauté the onions and celery until softened, about 5-7 minutes.
Add the diced apples and cook for another 3 minutes.
Stir in the sage, thyme, salt, and pepper.
Combine the toasted bread, sautéed vegetable mixture, and broth in a large bowl, tossing gently to coat.
Transfer the mixture to the prepared baking dish.
Cover with foil and bake for 25 minutes, then uncover and bake for an additional 20 minutes to crisp the top.

Notes
