Ingredients
1.5 cups pearled farro
2 large Honeycrisp apples, diced
0.5 cup walnuts, toasted and chopped
0.25 cup fresh parsley, finely chopped
3 tbsp lemon juice
4 tbsp extra virgin olive oil
1 tbsp maple syrup
Sea salt to taste
Instructions
Rinse the farro thoroughly under cold running water using a fine-mesh sieve.
Boil 4 cups of water with a pinch of sea salt in a large pot.
Simmer the farro for 20-25 minutes until tender yet slightly chewy.
Drain the excess water and transfer the warm farro to a large mixing bowl.
In a small jar, whisk together the lemon juice, olive oil, and maple syrup until emulsified.
Add the diced apples, toasted walnuts, and fresh parsley to the bowl with the warm farro.
Drizzle the dressing over the mixture and toss gently to combine.
Notes
Farro can be substituted with spelt or hulled wheat if preferred. The salad tastes excellent served warm or at room temperature, and the flavors meld nicely if prepared slightly in advance.
