Description

These Turkey Butternut Squash Meatballs are a nutrient-dense, flavorful main dish that combines lean protein with the seasonal sweetness of roasted squash. The squash acts as a natural binder, ensuring the meatballs remain incredibly moist and tender. Perfect for a healthy weeknight dinner, this recipe offers a sophisticated savory profile using fresh sage and aromatic garlic, providing a balanced meal that is as satisfying as it is wholesome.

Ingredients

Scale

1 lb Ground Turkey (93% lean)
1 cup Butternut Squash (pureed or finely mashed)
0.5 cup Breadcrumbs (panko or whole wheat)
1 large Egg
1 tsp Garlic Powder
1 tbsp Fresh Sage (minced)
Salt and Pepper to taste

Instructions

Preheat oven to 400 degrees Fahrenheit.
Peel, cube, and roast the butternut squash until fork-tender.
Mash the roasted squash thoroughly in a large mixing bowl.
Add ground turkey, breadcrumbs, egg, garlic powder, and fresh sage to the mashed squash.
Mix ingredients gently until just combined.
Form the mixture into golf-ball-sized spheres using damp hands.
Place meatballs onto a parchment-lined baking sheet.
Bake for 20 to 25 minutes until golden brown and cooked through.

Notes

Use damp hands to prevent the meat mixture from sticking to your palms while forming the meatballs. You can swap sage for fresh parsley or thyme if preferred. Store leftovers in an airtight container in the refrigerator for up to 3 days.
