Description

These turkey apple meatballs are a protein-packed delight, combining lean ground turkey with the crisp sweetness of grated Granny Smith apples. By utilizing the natural pectin in apples, these meatballs stay incredibly moist and tender without the need for heavy fillers. They are perfect for quick family dinners, meal prep, or serving alongside roasted vegetables for a nutritious, sophisticated meal that appeals to all ages.

Ingredients

Scale

1 lb ground turkey (93/7 ratio)
1 medium Granny Smith apple, peeled and finely grated
0.5 cup panko breadcrumbs
1 large egg
0.25 cup onion, finely minced
2 tbsp fresh parsley, chopped
Salt and pepper to taste
1 tbsp olive oil for searing

Instructions

Peel the apple and grate using the finest setting of a box grater.
Squeeze grated apple in a clean towel to remove excess liquid.
In a large bowl, combine turkey, grated apple, breadcrumbs, egg, minced onion, parsley, salt, and pepper.
Mix gently by hand until just combined.
Form the mixture into uniform golf-ball-sized portions.
Heat oil in a skillet over medium-high heat.
Sear meatballs in batches until browned on all sides and cooked through, about 10 minutes.

Notes

Ensure the apple is squeezed well to prevent the meatballs from becoming too wet. These meatballs freeze perfectly for later use and retain their texture when reheated.
