Ingredients
2.5 – 3 pounds beef short ribs, flanken-cut or bone-i
1 tablespoon olive oil or neutral cooking oil
1 cup sweet chili sauce
½ cup low-sodium soy sauce
¼ cup rice vinegar
2 tablespoons light brown sugar, packed
1 tablespoon freshly grated ginger
4 cloves garlic, minced
1 teaspoon sesame oil
1 teaspoon red pepper flakes
Juice of ½ a lime
Fresh cilantro, chopped (for garnish)
Sesame seeds (for garnish)
Instructions
- Pat the beef short ribs dry with paper towels and season with salt and pepper
- Heat olive oil in a Dutch oven over medium-high heat, sear the ribs for 3-4 minutes on each side until browned, then set aside
- In the same pot, sauté garlic and ginger until fragrant, then stir in sweet chili sauce, soy sauce, rice vinegar, brown sugar, sesame oil, and red pepper flakes. Bring to a simmer
- Return the ribs to the pot, cover them with sauce, and braise in a preheated oven at 300°F for 2.5 to 3 hours
- Once tender, remove ribs, boil the sauce until thickened, then stir in lime juice
- Coat the ribs in the thickened sauce and garnish with cilantro and sesame seeds before serving
Notes
Adjust the heat level by changing the quantity of red pepper flakes.
