Description

These Thai-inspired wraps are a perfect balance of savory and sweet, featuring tender halal chicken strips coated in a rich, creamy peanut sauce. Fresh, crunchy bell peppers and crisp lettuce leaves add vibrant texture, making this a healthy and satisfying meal that is perfect for busy weeknights or a light lunch. This interactive, flavor-packed dish is easy to customize and brings the bold, aromatic essence of street food right to your own kitchen table.

Ingredients

Scale

1 lb chicken breast, sliced into thin strips
1/2 cup natural creamy peanut butter
3 tbsp soy sauce
2 tbsp fresh lime juice
1 tbsp honey
1 tsp freshly grated ginger
8 large lettuce leaves (iceberg or butter)
1 large bell pepper, thinly sliced
1 tbsp neutral cooking oil

Instructions

In a small bowl, whisk together the peanut butter, soy sauce, lime juice, honey, and ginger until smooth.
Add a tablespoon of warm water if necessary to achieve a thin, pourable consistency for the sauce.
Heat the neutral oil in a large skillet over medium-high heat.
Add the chicken strips to the skillet and cook until they are browned and cooked through, about 5-7 minutes.
Remove the chicken from the heat and toss with half of the prepared peanut sauce until well coated.
Assemble the wraps by placing a generous amount of chicken and fresh bell pepper slices onto each lettuce leaf.
Drizzle the remaining peanut sauce over the assembled wraps before serving.

Notes

You can swap the chicken for thinly sliced thighs for a juicier texture. Feel free to add shredded carrots or chopped cilantro for extra crunch and freshness. Store leftover chicken and sauce separately in the refrigerator for up to 3 days. Always use fresh lime juice for the best flavor.
