Ingredients
4–6 Bone-in skin-on chicken thighs
1/2 cup all-purpose flour
3 tablespoons vegetable oil (or avocado oil)
2 medium yellow onions, thinly sliced into half-moons
2 cups low-sodium chicken broth
3 cloves garlic, minced
1 teaspoon paprika
1 teaspoon dried thyme
Salt and black pepper to taste
Instructions
In a shallow bowl, mix flour with salt, pepper, paprika, and thyme.
Dredge each chicken thigh in the flour mixture until evenly coated.
Heat oil in a heavy-bottomed cast-iron skillet over medium-high heat.
Sear the chicken pieces until golden brown on all sides, then remove and set aside.
Add the sliced onions to the skillet over medium heat, cooking until softened and translucent.
Whisk in the remaining flour from the dredging bowl to the onions and cook for 1-2 minutes to create a roux.
Slowly stir in the chicken broth and minced garlic while scraping up the browned bits from the bottom of the pan.
Return the chicken to the skillet and reduce heat to low.
Cover and simmer for 30 minutes, or until the chicken is tender and cooked through.
Adjust seasoning if necessary and serve warm.
