Ingredients
2 lbs Boneless, Skinless Chicken Thighs or Breasts, cut into 1-inch pieces
1 ½ cups Sweet Chili Sauce
¼ cup Low-Sodium Soy Sauce
2 tablespoons Rice Vinegar
2 tablespoons Light Brown Sugar, packed
1 tablespoon Minced Fresh Ginger
4 cloves Garlic, minced
1 tablespoon Cornstarch
2 tablespoons Cold Water

Instructions
- Prepare the Chicken: Cut chicken into 1-inch pieces and place in a slow cooker
- Whisk the Sauce: Combine sweet chili sauce, soy sauce, rice vinegar, brown sugar, ginger, and garlic in a bowl; whisk until combined
- Combine and Cook: Pour sauce over the chicken and stir gently to coat; cover

- Thicken the Sauce (Optional but Recommended): Remove chicken, mix cornstarch with cold water, and pour into sauce
- Cook to Thicken: Cook on HIGH for 15-30 mins until sauce thickens
