Ingredients
1 lb Large Shrimp (peeled and deveined)
1.5 cups Long Grain Rice (Jasmine or basmati)
1 tbsp Chili Powder
1 tsp Ground Cumin
3 tbsp Fresh Lime Juice
1 can Black Beans (rinsed and drained)
1 cup Corn Kernels (fresh or frozen)
1 large Avocado (sliced)
2 tbsp Olive Oil
Salt to taste
Instructions
Rinse the rice under cold water until the water runs clear to remove excess starch.
Boil the rice in a medium saucepan using a two-to-one water-to-rice ratio, then simmer on low heat until the liquid is absorbed and grains are tender.
In a large bowl, toss the shrimp with chili powder, cumin, salt, and half of the lime juice.
Heat the olive oil in a large skillet over medium-high heat.
