Description

Indulge in this elegant and flavor-packed shrimp scampi pasta, featuring succulent, perfectly seared shrimp tossed in a rich garlic, butter, and lemon sauce. This classic Italian-American dish relies on high-quality ingredients and a quick cooking method to ensure tender shrimp and a bright, emulsified sauce that clings beautifully to al dente linguine. Perfect for an impressive weeknight dinner that comes together in under thirty minutes.

Ingredients

Scale

1 lb Large Shrimp, peeled and deveined (tails on)
8 oz Linguine
4 tbsp Unsalted Butter
2 tbsp Extra Virgin Olive Oil
5 cloves Garlic, minced
2 tbsp Fresh Lemon Juice
1/2 tsp Red Pepper Flakes
1/4 cup Fresh Parsley, chopped

Instructions

Boil a large pot of salted water and cook linguine until just before al dente.
Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
Add shrimp in a single layer and sear for 2 minutes per side until pink and opaque.
Remove the shrimp from the skillet and set aside.
In the same skillet, add the remaining butter and minced garlic, sautéing for 1 minute.
Stir in the lemon juice, red pepper flakes, and the reserved pasta water to create a sauce.
Return the shrimp to the pan and toss in the cooked linguine.
Mix until well coated, garnish with fresh parsley, and serve immediately.

Notes

Ensure you do not overcook the shrimp by removing them from the heat once they turn pink and opaque. You can substitute spaghetti for linguine if preferred. For an extra touch of flavor, add a pinch of salt or fresh zest while finishing the sauce.
