Ingredients
1 lb Large Shrimp, deveined and peeled
1 cup Quinoa, rinsed thoroughly
2 tbsp Olive oil
1 cup Cucumber, diced finely
1 cup Cherry tomatoes, halved
1/4 cup Fresh parsley, finely chopped
2 tbsp Lemon juice, freshly squeezed
2 cloves Garlic, minced
Sea salt and black pepper to taste
Smoked paprika to taste
Instructions
Rinse the quinoa under cold water using a fine-mesh strainer.
Combine one cup of quinoa with two cups of water in a medium saucepan and simmer on low heat for 15 minutes.
Fluff the cooked quinoa with a fork and set aside to cool.
Pat the shrimp dry with paper towels and season with sea salt, black pepper, and smoked paprika.
Heat one tablespoon of olive oil in a skillet over medium-high heat.
Sear the shrimp for two minutes per side until opaque and pink.
In a large bowl, combine the cooked quinoa, cucumber, tomatoes, parsley, garlic, remaining olive oil, and lemon juice.
Divide the mixture into four bowls and top with the seared shrimp.
