Ingredients
4 cups cooked white rice (chilled or day-old)
1 pound shrimp (peeled, deveined, tails removed)
3 large eggs (lightly beaten with a pinch of salt)
4 stalks green onions (thinly sliced, whites and greens separated)
3 cloves garlic (minced)
3 tablespoons low-sodium soy sauce
1 teaspoon toasted sesame oil
2 tablespoons vegetable oil
Instructions
Heat one tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
Add the shrimp to the hot pan and cook for two minutes per side until pink and opaque.
Remove the shrimp from the pan and set aside on a plate.
Scramble the beaten eggs in the same pan, then remove and set aside.
Add the remaining tablespoon of vegetable oil to the pan and sauté the garlic and white parts of the green onions until fragrant.
Add the chilled rice and toss to coat with the aromatics, breaking up any clumps.
Stir in the soy sauce and cook for 3-4 minutes, allowing the rice to heat through.
Fold the cooked shrimp and scrambled eggs back into the pan.
Remove from heat, stir in the sesame oil, and garnish with the green parts of the green onions before serving.
Notes
Always use cold, day-old rice to ensure the grains stay distinct and prevent the final dish from becoming mushy. If you do not have day-old rice, spread freshly cooked rice onto a baking sheet and freeze for 15 minutes to cool and dry out the surface starch.
