2 Large Yellow Onions, chopped
2 Green Bell Peppers, chopped
4 Stalks Celery, chopped
6 Cloves Garlic, minced
1 (28-ounce) can Diced Tomatoes, undrained
8 cups Chicken Broth
2 Bay Leaves
1 tablespoon Smoked Paprika
1 teaspoon Dried Thyme
1 teaspoon Onion Powder
1 teaspoon Garlic Powder
½ teaspoon Cayenne Pepper
Salt and freshly ground black pepper, to taste
2 pounds Large Shrimp, peeled and deveined
Cooked White Rice, for serving
Fresh Green Onions, thinly sliced, for garnish
Fresh Parsley, chopped, for garnish


Instructions

  1. Prepare your ingredients by slicing sausage, chopping vegetables, and peeling shrimp
  2. Brown the sausage in a pot over medium-high heat and set aside
  3. Make the roux by adding oil and flour to the pot, stirring until it turns dark brow
  4. Add chopped vegetables and sauté until soft
  5. Mix in garlic and spices, then stir for a few minutes
  6. Pour in broth and tomatoes, bringing to a boil, then simmer for up to 2 hours
  7. Reintroduce sausage and add shrimp, cooking until shrimp are pink
  8. Adjust seasoning, serve over rice, and garnish with green onions and parsley
