2 cups quinoa, rinsed thoroughly
1 lb cremini mushrooms, finely chopped
3 cups low-sodium vegetable broth
1 large yellow onion, diced
3 celery stalks, diced
1 tbsp fresh sage, chopped
3 tbsp olive oil


Instructions

Rinse the quinoa under cold water in a fine-mesh sieve to remove bitterness.
Sauté the chopped onions and celery in olive oil over medium heat until translucent and soft.
Add the finely chopped mushrooms to the pan and cook until they release their moisture.
Stir in the dry quinoa to toast it for two minutes until it smells slightly nutty.
Pour in the vegetable broth and bring the mixture to a gentle boil.
Reduce the heat to low, cover the pot tightly, and simmer for 15 minutes until liquid absorbs.
Fluff the cooked mixture with a fork to separate the grains and incorporate fresh herbs.

Notes

Rinsing quinoa is essential to remove naturally occurring saponins which can cause a bitter taste. If you prefer a richer flavor, you can substitute the olive oil with melted ghee. Use fresh herbs whenever possible for the best aroma, but dried sage can be substituted if you use 1 teaspoon instead of a tablespoon.
