1/2 cup Milk

2 cups Heavy cream, chilled, divided
4 ounces Dark chocolate, finely chopped
2 tablespoons Unsalted butter
1 tablespoon Light corn syrup

Instructions

  1. Prepare the Pistachio Paste: Toast shelled pistachios in a dry pan over medium heat until lightly golden, then cool and process into a paste
  2. Infuse the Milk: Warm milk, half of the sugar, and almond extract until sugar dissolves. Mix in pistachio paste
  3. Bloom the Gelatin: Sprinkle gelatin over cold water and let it bloom, then add to the warm pistachio mixture and mix thoroughly
  4. Whip the Cream: In a chilled bowl, whip 1.5 cups heavy cream with the remaining sugar until soft peaks form
  5. Combine the Mousse: Gently fold the pistachio mixture into the whipped cream until no streaks remai
  6. Chill the Mousse: Divide into serving dishes, cover, and refrigerate for at least 4 hours or overnight
  7. Prepare the Chocolate Drizzle: Melt chocolate, remaining cream, butter, corn syrup, and salt in a double boiler until smooth
  8. Drizzle and Serve: Drizzle chocolate over mousse before serving and garnish with chopped pistachios
