Ingredients
1 cup Shelled pistachios, unsalted
1/2 cup Milk
1/2 cup Granulated sugar, divided
1/4 teaspoon Almond extract (optional)
1 1/2 teaspoons Unflavored gelatin powder
3 tablespoons Cold water
2 cups Heavy cream, chilled, divided
4 ounces Dark chocolate, finely chopped
2 tablespoons Unsalted butter
1 tablespoon Light corn syrup
Pinch of salt
Instructions
- Prepare the Pistachio Paste: Toast shelled pistachios in a dry pan over medium heat until lightly golden, then cool and process into a paste
- Infuse the Milk: Warm milk, half of the sugar, and almond extract until sugar dissolves. Mix in pistachio paste
- Bloom the Gelatin: Sprinkle gelatin over cold water and let it bloom, then add to the warm pistachio mixture and mix thoroughly
- Whip the Cream: In a chilled bowl, whip 1.5 cups heavy cream with the remaining sugar until soft peaks form
