A fresh, homemade take on Panera’s classic salad with a tangy poppyseed vinaigrette and seasonal strawberries. Satisfyingly crisp greens and sweet berries balance the nutty dressing.
Ingredients
6 cups romaine lettuce
1 pint strawberries
2 tbsp poppyseeds
2 tbsp balsamic vinegar
1 tbsp honey
3 tbsp extra virgin olive oil
Crushed pistachios (optional)
Instructions
Chop romaine into 2-inch pieces and place in a large bowl
Whisk poppyseeds, balsamic vinegar, honey, and olive oil into a smooth dressing
Pour half the dressing over greens, toss, and let sit 5 minutes
Add halved strawberries just before serving
Top with remaining dressing and crushed pistachios, if desired
Notes
Toast poppyseeds in a dry skillet for 30 seconds to enhance nuttiness
Chill dressing 1 hour for improved emulsion
Add day-old grains (e.g., quinoa) for extra texture if making in advance
