Description

A robust, crowd-pleasing meal that blends golden, buttery cornbread with a seasoned ground beef and vegetable filling. This hearty Tex-Mex casserole is perfect for a quick weeknight dinner, balancing sweet corn notes with zesty spices and melted sharp cheddar cheese. It offers a satisfying contrast between crispy, browned edges and a moist, tender interior, ensuring a high-protein, family-friendly meal that simplifies cleanup.

Ingredients

Scale

1 lb Ground Beef (85% lean)
2 boxes (8.5oz each) Cornbread Mix
1 can (15oz) Black Beans, rinsed and drained
1 cup Corn Kernels
1 can (10oz) Diced Tomatoes with Chilies
2 cups Sharp Cheddar, shredded
1 packet Taco Seasoning (low-sodium)
1 cup Milk
2 large Eggs

Instructions

Preheat oven to 400°F and grease a 9×13 inch baking dish.
Brown the ground beef in a large skillet over medium-high heat until fully cooked.
Stir in taco seasoning, tomatoes with chilies, black beans, and corn kernels; simmer for 5 minutes.
Spread the beef mixture evenly into the bottom of the prepared baking dish.
Sprinkle the shredded cheddar cheese over the beef mixture.
Whisk the eggs and milk in a medium bowl until blended.
Add the cornbread mix to the egg mixture and stir until combined.
Pour the cornbread batter evenly over the cheese and beef layer.
Bake for 35-40 minutes or until the cornbread topping is golden brown.

Notes

Substitute ground beef with ground turkey for a leaner version.
You can add jarred jalapeños to the beef mixture for extra heat.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
