1 lb ground beef (85% lean)
4 large Yukon gold potatoes
2 cups tomato sauce (no added sugar)
1 medium onion, finely diced
3 cloves garlic, minced
1.5 cups shredded mozzarella cheese
1 tbsp Italian seasoning
Cooking oil spray


Instructions

Preheat your oven to 400 degrees Fahrenheit.
Peel and slice the potatoes into uniform half-inch thick rounds.
In a large bowl, combine the ground beef, half of the minced garlic, and half of the Italian seasoning.
Form the meat mixture into golf-ball-sized meatballs.
Grease a large baking dish and arrange the potato slices in a single layer at the bottom.
Place the raw meatballs evenly on top of the potato bed.
In a separate bowl, whisk together the remaining garlic, tomato sauce, and Italian seasoning.
Pour the tomato sauce mixture over the meatballs and potatoes until evenly coated.
Bake for 45 minutes or until the potatoes are tender and the meatballs are cooked through.
Remove from the oven, sprinkle the mozzarella cheese over the top, and return to the oven for 5 minutes until the cheese is bubbly and golden.
