Description

These maple glazed carrots are the perfect side dish, combining the natural earthiness of roasted carrots with a rich, caramelized maple syrup coating. Simple to prepare yet visually stunning, this recipe transforms basic produce into a restaurant-quality accompaniment that pairs beautifully with roasted chicken or lamb. The high-heat roasting method ensures the carrots remain fork-tender inside while developing a sticky, flavorful exterior glaze.

Ingredients

Scale

1 lb Fresh Carrots, peeled and sliced into 3-inch batons
3 tbsp Pure Maple Syrup
2 tbsp Unsalted Butter, melted
1/2 tsp Sea Salt
1 tsp Fresh Thyme

Instructions

Preheat your oven to 400 degrees Fahrenheit.
Wash and peel the fresh carrots thoroughly under cold running water.
Cut the carrots into uniform 3-inch strips.
In a small bowl, whisk together the melted butter, pure maple syrup, salt, and fresh thyme.
Toss the carrot batons into the mixture until they are completely coated.
Spread the carrots onto a parchment-lined baking sheet in a single layer.
Roast the carrots for 20 minutes, turning them halfway through to ensure balanced browning and caramelization.
Remove from the oven once the carrots are fork-tender and the glaze is sticky.

Notes

Ensure the carrots are cut into uniform sizes to promote even cooking. If you do not have fresh thyme, you can substitute with 1/2 teaspoon of dried thyme. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
