Ingredients

1.5 cups dry couscous
1.75 cups vegetable broth
3 tbsp lemon juice
1 tbsp lemon zest
0.5 cup fresh parsley, finely chopped
2 tbsp fresh mint, finely chopped
2 tbsp extra virgin olive oil
0.5 tsp salt


Instructions

Boil the vegetable broth in a small saucepan over medium-high heat.
Stir in the salt and olive oil once the broth reaches a rolling boil.
Add the dry couscous to the saucepan and remove it immediately from the heat.
Cover the pot tightly with a lid and let it stand for 5 minutes to steam.
