1 lb Ground Beef (85/15 fat ratio)
4 medium Yukon gold potatoes
3 whole carrots
1 medium yellow onion
1 can cream of mushroom soup (alcohol-free)
1 cup frozen peas
2 cups cheddar cheese, shredded
0.5 cup low-sodium beef broth
Olive oil for greasing


Instructions

Preheat your oven to 375 degrees Fahrenheit.
Grease a 9×13 baking dish with olive oil or butter.
Peel and slice the potatoes into 1/4 inch rounds.
Brown the ground beef in a skillet over medium-high heat until cooked through, then drain excess fat.
