Description

This protein-packed and nutrient-dense healthy beef chili is the ultimate wholesome comfort meal. By utilizing lean ground beef, fiber-rich beans, and fresh vegetables like bell peppers and onions, this recipe delivers a bold, complex flavor profile without excess fat. It is perfect for busy weeknight dinners and meal prepping, as the flavors develop even further when stored. This satisfying dish is designed to fuel your body and keep you full, making it a reliable favorite for any balanced dietary plan.

Ingredients

Scale

1.5 lbs lean ground beef (90/10)
15 oz can black beans, rinsed and drained
15 oz can dark red kidney beans, rinsed and drained
28 oz can fire-roasted diced tomatoes
1 large yellow onion, diced
1 large green bell pepper, diced
3 cloves garlic, minced
2 tablespoons chili powder
1 tablespoon ground cumin
1 cup low-sodium beef broth

Instructions

Heat a large heavy-bottomed pot over medium-high heat until hot.
Add the lean ground beef to the pot and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat if necessary.
Stir in the diced onion, green bell pepper, and garlic. Sauté until the vegetables are softened and translucent.
Add the chili powder and cumin, stirring for about a minute to toast the spices and release their aroma.
Pour in the diced tomatoes, black beans, kidney beans, and low-sodium beef broth.
Bring the mixture to a gentle boil, then reduce the heat to low.
Simmer uncovered for 30-40 minutes, stirring occasionally, until the chili has thickened to your desired consistency.
Serve hot, optionally garnished with fresh herbs or extra vegetables.

Notes

Store in an airtight container in the refrigerator for up to 4 days. This chili tastes even better the next day as the spices meld. It is also freezer-friendly for up to 3 months. Adjust the chili powder quantity if you prefer a milder or spicier flavor profile.
