4 medium zucchinis
1 lb ground turkey (93/7 lean)
1 small onion, finely diced
3 cloves garlic, minced
1 cup tomato sauce (no added sugar)
1 cup mozzarella cheese, shredded
1 tbsp Italian seasoning
1 tbsp extra virgin olive oil


Instructions

Preheat your oven to 400°F (200°C).
Slice each zucchini in half lengthwise and scoop out the center seeds with a spoon to create a boat.
Brush the zucchini shells with olive oil and place them on a parchment-lined baking sheet.
Heat a large skillet over medium-high heat and brown the ground turkey until no pink remains.
Add the diced onion and minced garlic to the skillet and sauté until soft and fragrant.
Stir in the tomato sauce and Italian seasoning, simmering for 5 minutes.
Spoon the meat mixture into the zucchini boats.
Bake for 20-25 minutes until the zucchini is tender.
Top with mozzarella cheese and bake for an additional 5 minutes until the cheese is melted and bubbly.

Notes
