Ingredients

1 lb Ground Turkey (93% lean)
2 large Sweet Potatoes, peeled and diced into 1/2 inch cubes
1 medium Onion, diced
1 large Bell Pepper, diced
3 cloves Garlic, minced
2 tbsp Olive Oil
1 tsp Smoked Paprika
Salt and black pepper to taste


Instructions

Wash and peel the sweet potatoes, then dice them into uniform 1/2 inch cubes.
Chop the onion and bell pepper, and mince the garlic.
Heat olive oil in a large heavy-bottomed skillet over medium heat.
Add the diced sweet potatoes and sauté for 10 minutes, stirring occasionally until golden and slightly tender.
Push the potatoes to the side of the skillet and add the ground turkey to the center.
Brown the meat thoroughly, breaking it apart with a spatula until no longer pink.
Add the diced onions and bell peppers to the skillet.
Cook, stirring frequently until the vegetables are softened and all flavors have melded.
Season with smoked paprika, salt, and pepper to taste before serving.

Notes
