Ingredients
1 lb 90% lean ground beef
2 cups basmati rice
1.5 cups corn kernels
2 tbsp chipotle peppers in adobo, finely minced
3 tbsp fresh lime juice
0.5 cup fresh cilantro, chopped
1 tbsp cumin and garlic powder blend
Instructions
Rinse the rice under cold water until the water runs clear.
Boil two cups of water and add the rice.
