Description
A hearty, time-saving one-pan meal that brings all the essential components of a traditional burrito together. By browning lean ground beef with savory taco spices, toasting rice, and simmering everything in a rich beef broth alongside protein-rich black beans, you achieve a complex flavor without the need for multiple pots. Finished with melty sharp cheddar, this dish is perfect for busy weeknights when you want a nutritious, family-friendly dinner with minimal cleanup.
Ingredients
1 lb Ground Beef (85/15 lean beef)
1 cup White Rice (long-grain jasmine)
15 oz Black Beans (rinsed and drained)
2 cups Beef Broth (low-sodium)
2 Tbsp Taco Seasoning
1 cup Shredded Cheddar Cheese
Instructions
Heat a large skillet over medium-high heat until hot.
Add the ground beef to the pan and break it apart with a spatula.
Cook the beef until it reaches a deep brown color and appears crumbly.
Drain excess fat carefully from the pan to ensure a clean flavor profile.
Stir in the taco seasoning until the meat coating looks uniform.
Add the uncooked rice, stirring constantly for one minute to toast the grains.
Pour in the beef broth, scraping the bottom of the pan to release browned bits.
Reduce the heat to low and cover the skillet immediately.
Simmer for 15-18 minutes until rice is tender and liquid is absorbed.
Stir in black beans and top with shredded cheddar.
Cover for 2 minutes to allow the cheese to melt before serving.
Notes
You can customize this dish by adding diced bell peppers or onions during the browning stage. For extra heat, add a pinch of chili flakes or diced jalapeños. Serve with fresh cilantro, lime wedges, and a dollop of sour cream or Greek yogurt.
