Description

This Ground Beef Avocado Street Corn Bowl is a vibrant, protein-packed meal that perfectly balances savory, spiced beef with the creamy texture of fresh avocado and the smoky sweetness of charred corn. It is an ideal weeknight dinner choice, offering a satisfying and nutrient-dense experience that is easy to assemble with pantry staples and fresh produce, providing a lighter alternative to traditional taco nights.

Ingredients

Scale

1 lb Ground Beef (85/15 lean ratio)
2 cups Corn Kernels (fresh or frozen/thawed)
2 large Avocados, diced
1 tbsp Chili Powder
2 tbsp Lime Juice, freshly squeezed
1/4 cup Cilantro, chopped
2 tbsp Olive Oil
Salt and black pepper to taste

Instructions

Heat one tablespoon of olive oil in a large cast-iron skillet over medium-high heat.
Add the ground beef to the pan once the oil shimmers.
Break the meat into small crumbles using a wooden spatula as it browns.
Stir in the chili powder, salt, and black pepper until the beef is uniformly seasoned.
Remove the cooked beef from the skillet and set it aside.
Add the remaining tablespoon of olive oil to the same skillet.
Pour in the corn kernels and spread them into a single even layer.
Cook the corn undisturbed for five minutes until a golden char develops.
Toss the corn occasionally until most kernels show dark brown spots.
Combine the beef and charred corn in bowls, top with diced avocado, drizzle with fresh lime juice, and garnish with chopped cilantro.

Notes

Ensure the beef is cooked through completely. You can add extra vegetables like bell peppers or onions to the skillet when charring the corn for additional flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days, though avocado is best added fresh just before serving.
