Description
Golumpki soup dinner captures the soul-warming essence of traditional Polish cabbage rolls in an accessible, one-pot format perfect for busy family evenings. This robust dish combines flavorful ground beef, tender green cabbage, and aromatic onions in a rich tomato-based broth. It replicates the classic flavor profile without the labor-intensive rolling process, creating a silky, satisfying soup that is perfect for colder months and tastes even better as leftovers.
Ingredients
1 lb ground beef (85/15 lean)
4 cups green cabbage, chopped into ribbons
28 oz plain tomato sauce
4 cups beef broth (low sodium)
1.5 cups cooked white rice
1 cup yellow onion, finely diced
Instructions
Heat a large heavy-bottomed pot over medium-high heat.
Add the ground beef to the pot and break into small crumbles with a wooden spoon.
Stir in the diced onion once the beef is browned and cook until onions are translucent.
Pour in the tomato sauce and beef broth, stirring to combine.
Add the chopped cabbage ribbons to the pot.
Reduce heat to low, cover securely, and simmer for 30 minutes until the cabbage is tender.
Stir in the cooked rice and heat through before serving.
Notes
Using day-old rice helps ensure it holds its texture well in the broth. This soup tastes even better the next day after the flavors have had time to meld in the refrigerator. Store in an airtight container for up to 3 days.
