Ingredients
1.5 lbs asparagus spears, trimmed
1 Tbsp extra virgin olive oil
2 Tbsp fresh lemon juice (from 1–2 lemons)
1/4 tsp sea salt (adjust to taste)
1/8 tsp ground black pepper (freshly ground)
1/2 tsp garlic powder
2 Tbsp fresh parsley, optional for garnish
Instructions
Preheat oven to 400°F (200°C)
Separate asparagus into thick and thin spears
Snap off woody ends and wash then dry thoroughly
In a bowl, mix olive oil, lemon juice, salt, pepper, and garlic powder
Toss thick and thin spears separately in the marinade
Arrange thick spears on a baking sheet in a single layer, positioning perpendicular to oven racks
Add thin spears as a secondary layer
Roast for 12-15 minutes until charred and tender, shaking pan once during cooking
Garnish with fresh parsley before serving

Separating thick/thin spears ensures even roasting
Olive oil absorbs lemon juice better when chilled
Garlic powder provides cleaner flavor than raw garlic
