Description

Indulge in this restaurant-quality creamy salmon pasta that brings elegance to your weeknight dinner table. This dish features succulent, pan-seared salmon flaked into a rich, silky parmesan cream sauce, brightened with fresh lemon zest and baby spinach. Perfectly balanced and comforting, this meal comes together in under thirty minutes, making it an ideal choice for both busy weeknights and special occasions where a sophisticated, fresh, and seafood-forward meal is desired.

Ingredients

Scale

2 large skinless and boneless salmon fillets
12 oz fettuccine or linguine pasta
1 cup heavy cream
3 cloves garlic, minced
1 whole lemon, zested and juiced
2 cups fresh baby spinach
1/2 cup freshly grated parmesan cheese
2 tbsp extra virgin olive oil
Salt and black pepper to taste
1 tsp dried oregano

Instructions

Boil a large pot of salted water and cook the pasta according to package directions until al dente.
Season the salmon fillets generously with salt, pepper, and dried oregano.
Sear the salmon in a large skillet over medium-high heat until golden brown and cooked through.
Remove the salmon from the pan and flake it into bite-sized pieces with a fork.
Sauté the minced garlic in the same skillet until fragrant but not browned.
Pour in the heavy cream and bring the liquid to a gentle simmer for three minutes.
Whisk in the parmesan cheese until the sauce thickens slightly.
Add the spinach, lemon zest, and lemon juice to the pan and stir until the greens wilt.
Fold the flaked salmon and the cooked pasta into the sauce, tossing gently until well coated and heated through.

Notes

Ensure you do not overcook the salmon during the searing process to maintain its moisture. For a lighter version, you can substitute half of the heavy cream with vegetable broth. Store any leftovers in an airtight container in the refrigerator for up to two days.
