Ingredients
1 lb boneless skinless chicken breast, diced
1 cup whole milk ricotta cheese
12 oz penne pasta
2 cups fresh spinach, chopped
3 cloves garlic, minced
2 tbsp extra virgin olive oil
0.5 cup freshly grated Parmesan cheese
0.5 cup chicken broth
Salt and black pepper to taste
Instructions
Boil a large pot of salted water and cook penne pasta until al dente.
Reserve one cup of pasta water, then drain the pasta.
Heat olive oil in a large skillet over medium-high heat.
Add seasoned chicken cubes and sauté until golden brown and cooked through.
