Description

Creamy Cheesesteak Tortellini combines the flavors of a classic Philly cheesesteak with tender tortellini in a rich, velvety cheese sauce. It's easy to prepare and perfect for busy weeknights.


Ingredients

1 tablespoon Olive Oil
1 pound Lean Ground Beef
1 large Yellow Onion, thinly sliced
1 Green Bell Pepper, thinly sliced
2 cloves Garlic, minced
1 teaspoon Salt, divided
½ teaspoon Black Pepper, divided
½ teaspoon Dried Oregano
¼ teaspoon Red Pepper Flakes (optional)
1 cup Beef Broth
8 ounces Cream Cheese, softened
½ cup Whole Milk or Half-and-Half
1 cup Shredded Provolone Cheese
½ cup Grated Parmesan Cheese, plus more for garnish
1920 ounces Fresh or Frozen Cheese Tortellini
Fresh Parsley, chopped, for garnish


Instructions

  1. Cook the Tortellini in a large pot of salted water according to package directions until al dente. Drain and set aside, reserving ½ cup of pasta water
  2. In a large skillet, heat the Olive Oil over medium-high heat. Add the Lean Ground Beef and cook until fully browned. Drain excess fat
  3. Push the cooked beef to one side of the skillet. Add Yellow Onion and Green Bell Pepper to the empty side and sauté until softened
  4. Stir in the minced Garlic and cook for an additional minute. Add the Salt, Black Pepper, Dried Oregano, and Red Pepper Flakes, then mix well
  5. Pour in the Beef Broth and scrape the bottom of the pan to deglaze. Bring to a simmer
  6. Reduce heat to medium-low, add Cream Cheese and stir until melted. Then add Milk or Half-and-Half
  7. Gradually add Provolone Cheese and Parmesan Cheese, stirring continuously until melted. Add reserved pasta water if needed for consistency
  8. Gently toss the cooked Tortellini in the sauce until evenly coated. Serve topped with chopped Parsley and additional Parmesan if desired
