Ingredients
1.5 lbs chicken breast, cut into 1-inch cubes
2 large sweet potatoes, peeled and diced small

3 cups fresh spinach
Salt and black pepper to taste
Instructions
Heat one tablespoon of olive oil in a large cast-iron skillet over medium-high heat.

Remove potatoes from the skillet and set aside.
