1.5 lbs chicken breast, sliced into thin strips
1 lb cremini mushrooms, sliced thick
1 medium yellow onion, finely diced
3 garlic cloves, minced
1 cup chicken broth, low sodium
1/2 cup sour cream, room temperature
1 tsp fresh thyme
2 tbsp olive oil
Salt and black pepper to taste

Instructions

Pour in the chicken broth and bring to a simmer, scraping up any browned bits.
Return the chicken to the skillet and stir in the room temperature sour cream.
Heat gently until warmed through and serve immediately, garnished with fresh parsley.

Notes

Ensure the sour cream is at room temperature before adding to the pan to prevent curdling. Serve over egg noodles, mashed potatoes, or steamed rice for a complete meal. Dried thyme can be substituted if fresh is unavailable, using half the amount.
