1.5 lbs chicken breast, cut into bite-sized cubes
1 cup feta cheese, crumbled
0.5 cup fresh parsley, finely chopped
0.25 cup fresh dill, finely chopped
2 cups quinoa, cooked in vegetable broth
1 large cucumber, diced
1 cup cherry tomatoes, halved
3 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
Sea salt, black pepper, and dried oregano to taste


Instructions

Season the cubed chicken breast generously with sea salt, black pepper, and dried oregano.
Heat the olive oil in a large skillet over medium-high heat until the surface shimmers.
Sear the chicken pieces in a single layer until golden brown on all sides and cooked through (165°F).
Remove the skillet from heat once fully cooked.
In each of the four bowls, place a base of cooked quinoa.
Top the quinoa with the seared chicken, diced cucumber, and halved cherry tomatoes.
Sprinkle each bowl with the crumbled feta, chopped parsley, and chopped dill.
Drizzle with fresh lemon juice and serve immediately.

Notes
