Ingredients
1 lb ground beef (85% lean)
1.5 cups white rice, cooked and cooled
1 packet low-sodium taco seasoning
15 oz black beans, rinsed and drained
1 cup corn kernels
1 cup salsa
2 cups cheddar cheese, freshly shredded
0.5 cup beef broth
Instructions
Preheat your oven to 375°F (190°C).
Brown the ground beef in a skillet over medium-high heat until fully cooked.
Drain excess fat from the beef.
Stir in the taco seasoning and beef broth until well coated.
In a large mixing bowl, combine the beef mixture, cooked rice, beans, corn, and salsa.
Transfer the mixture into a greased 9×13 inch baking dish.
Top the dish evenly with the shredded cheddar cheese.
Bake for 30 minutes until the cheese is melted and bubbly.
Notes
Ensure the rice is cooled before mixing to prevent the bake from turning mushy. You can garnish with fresh cilantro or diced tomatoes after baking for extra freshness. Store leftovers in an airtight container for up to 3 days.
