1 lb ground beef (85/15 blend)
8 oz cremini mushrooms, sliced
1.5 cups long grain white rice, rinsed
3 cups low-sodium beef broth
1 small yellow onion, diced
3 cloves garlic, minced
2 tbsp soy sauce
1 tbsp olive oil


Instructions

Heat olive oil in a large heavy-bottomed skillet over medium-high heat.
Add ground beef and brown thoroughly, breaking into small crumbles.
Remove beef from skillet using a slotted spoon and set aside.
Sauté diced onions and sliced mushrooms in the remaining beef fat until moisture evaporates.
Add minced garlic and cook for one minute until fragrant.
Add rinsed rice to the skillet and toast for two minutes, stirring constantly.
Pour in beef broth and soy sauce, scraping up any browned bits from the bottom.
Return the beef to the skillet and stir to combine.
Cover the skillet, reduce heat to low, and simmer for 15-18 minutes until rice is tender and liquid is absorbed.
Remove from heat and let sit covered for 5 minutes before fluffing with a fork.

Notes
