Description

Ingredients

6 cups seedless watermelon, cubed
1 1/2 cups blackberries
1 small red onion, thinly sliced
1 cup balsamic vinegar
1/4 cup sugar
2 tablespoons olive oil


Instructions

Cut watermelon into 1-inch cubes
Trim both ends of blackberries to reduce juice dissolution
Cover onion slices with ice water for 10 minutes to reduce bite
Chill watermelon and blackberries in refrigerator
In a skillet, combine balsamic vinegar, sugar, and olive oil
Simmer over medium heat until reduction passes spoon test
Remove from heat and let cool slightly
Toss chilled watermelon and blackberries gently with blotted-dry onions
Drizzle with warm balsamic reduction and serve in flat-bottomed bowls
