Ingredients
1.5 lbs chicken breast, boneless and skinless, sliced into cutlets
1.5 cups pure unfiltered apple cider
0.5 cup low-sodium chicken stock
2 tbsp extra virgin olive oil
1 tsp dried thyme
3 cloves garlic, minced finely
Salt and black pepper to taste
Instructions
Pat the chicken cutlets dry with paper towels and season both sides liberally with salt and black pepper.
Heat olive oil in a large skillet over medium-high heat until shimmering.
Place chicken into the hot pan and sear for five minutes per side until golden brown.
Remove the chicken from the skillet and set it aside on a clean plate.
Add minced garlic to the same skillet and sauté briefly until fragrant.
Pour in the apple cider and chicken stock, scraping up any browned bits from the bottom of the pan.

Return the chicken to the skillet, coating it thoroughly in the sauce until cooked through and tender.
Notes
