Description

Zucchini and Feta Fritters are a delightful combination of crispy and tender textures, enhanced by the salty tang of feta cheese. Perfect for a light lunch, side dish, or appetizer, they turn humble zucchini into a star dish that's simple to prepare and adaptable to various tastes.


Ingredients

2 medium zucchini
1 teaspoon salt
1 large egg
1/2 cup all-purpose flour
1/2 cup crumbled feta cheese
1/4 cup finely chopped fresh parsley
2 cloves garlic, minced
1/4 teaspoon black pepper
Pinch of red pepper flakes (optional)
23 tablespoons olive oil or vegetable oil


Instructions

  1. Grate the zucchini and sprinkle with salt. Let it sit for 10-15 minutes to draw out moisture
  2. Squeeze out excess moisture from the grated zucchini
  3. In a bowl, mix the squeezed zucchini with egg, flour, feta, parsley, garlic, pepper, and red pepper flakes
  4. Heat oil in a skillet over medium heat
  5. Form fritters from the mixture and fry until golden brown on both sides
  6. Transfer fritters to paper towels to drain excess oil and serve hot

Ensure to squeeze out as much moisture from the zucchini as possible for crispy fritters.
