Ingredients
2 medium zucchini
1 teaspoon salt
1 large egg
1/2 cup all-purpose flour
1/2 cup crumbled feta cheese
1/4 cup finely chopped fresh parsley
2 cloves garlic, minced
1/4 teaspoon black pepper
Pinch of red pepper flakes (optional)
2–3 tablespoons olive oil or vegetable oil
Instructions
- Grate the zucchini and sprinkle with salt. Let it sit for 10-15 minutes to draw out moisture
- Squeeze out excess moisture from the grated zucchini
- In a bowl, mix the squeezed zucchini with egg, flour, feta, parsley, garlic, pepper, and red pepper flakes
- Heat oil in a skillet over medium heat
- Form fritters from the mixture and fry until golden brown on both sides
- Transfer fritters to paper towels to drain excess oil and serve hot
