Description

This White Bolognese Sauce offers a sophisticated twist on a beloved Italian classic, captivating your senses with its creamy texture and deep, savory flavors. It is a lighter take on traditional Bolognese that retains all the richness without the tomatoes.


Ingredients

2 tablespoons Olive Oil
1 large Onion, finely diced
2 Carrots, finely diced
2 Celery Stalks, finely diced
4 cloves Garlic, minced
1 pound Lean Ground Beef
1 teaspoon Dried Oregano
½ teaspoon Dried Thyme
Salt and Freshly Ground Black Pepper, to taste
½ cup Chicken Broth
2 cups Whole Milk
¼ cup Heavy Cream, optional
¼ cup Freshly Grated Parmesan Cheese, plus more for serving
Fresh Parsley, chopped, for garnish
1 pound Pasta, such as Tagliatelle, Pappardelle, or Rigatoni


Instructions

  1. Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat
  2. Add the finely diced onion, carrots, and celery. Sauté gently for 8-10 minutes until softened
  3. Stir in the minced garlic, dried oregano, and dried thyme. Cook for another 1-2 minutes until fragrant
  4. Push the vegetables to one side of the pot and add the ground beef. Cook until deeply browned all over, then mix with the vegetables and season with salt and pepper
  5. Pour in the chicken broth and scrape up any browned bits stuck to the bottom. Let it simmer for a few minutes
  6. Stir in the whole milk and heavy cream. Bring to a gentle simmer, cover, and let cook for at least 1 hour, stirring occasionally
  7. After simmering, taste the sauce and adjust seasoning if needed. Stir in the Parmesan cheese until smooth
  8. Cook the chosen pasta according to package directions, drain, and toss with the White Bolognese Sauce. Garnish with parsley and extra Parmesan before serving

Notes

This sauce can be made ahead and stored in the refrigerator for up to 3-4 days.

Leftover sauce freezes well for up to 3 months.
