Ingredients
2 navel oranges (for juice and zest)
1 lime (zest and juice)
3 tbsp tahini
1.5 tbsp honey (or maple syrup)
1 tsp sesame oil
3 tbsp neutral oil
4 cups grated carrots
2 cups arugula
1/4 cup chopped fresh herbs (e.g., cilantro or mint)
1/2 cup sliced almonds (toasted)
Instructions
Peel navel oranges using a microplane; set aside juice and zest
Grate carrots using a box grater or food processor
Toast sliced almonds in a dry skillet 3-4 minutes
Zest lime and oranges, then juice the rind-free citrus
In a bowl, whisk lime zest/juice, tahini, honey, and sesame oil
Slowly add 3 tbsp neutral oil while whisking until emulsified
In a large bowl, combine grated carrots, arugula, and herbs
Pour dressing over and toss gently to coat
Let sit 10-15 minutes before serving
Notes
Use juicier oranges (blood or Valencia) for brighter flavor
Chill ingredients 30 minutes for a cooler salad
Add a pinch of salt to the dressing for better emulsification
To preserve carrot texture, avoid over-tossing the salad
