2 large Eggs, at room temperature
1 cup (240ml) Whole Milk, at room temperature
2 teaspoons Pure Vanilla Extract
1 cup (226g) Unsalted Butter, softened for frosting
4 cups (480g) Powdered Sugar, sifted for frosting
¼ cup (60ml) Whole Milk or heavy cream, at room temperature for frosting
1 teaspoon Pure Vanilla Extract for frosting
Pinch of Salt for frosting
Instructions
- Preheat your oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners
- In a large bowl, whisk together flour, sugar, baking powder, and salt
- Add softened butter to the dry ingredients and beat until it resembles coarse crumbs
- In a separate bowl, whisk together eggs, milk, and vanilla extract
- Gradually add the wet ingredients to the dry ingredients and beat until just combined
- Fill the muffin liners two-thirds full with the batter
- Bake for 18-22 minutes, or until a skewer comes out clea
- Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely
- For the frosting, beat softened butter until light and fluffy, then gradually add sifted powdered sugar
- Add milk, vanilla, and a pinch of salt, and beat until smooth and fluffy
- Once the cupcakes are cool, frost them with the sweet buttercream
