1 cup Passionfruit pulp
¾ cup Granulated sugar
4 large Eggs
2 large Egg yolks
½ cup Unsalted butter

Instructions

  1. Step 1: Prepare the Passionfruit Pulp by halving the passionfruit, scooping out the pulp and seeds into a sieve over a bowl, and pressing through to get 1 cup of juice
  2. Step 2: Combine Ingredients by whisking sugar, eggs, yolks, and the passionfruit juice in a heatproof bowl
  3. Step 3: Cook the Curd over a double boiler, whisking continuously for 10-15 minutes until thick
  4. Step 4: Incorporate Butter by adding cubed butter and salt to the mixture, whisking until melted
  5. Step 5: Strain the Curd through a sieve into a bowl to ensure smoothness
