Ingredients
1.5 lbs Boneless, skinless chicken thighs, cut into 1-inch pieces
1 tablespoon Olive oil
1 medium Yellow onion, finely chopped
3 cloves Garlic, minced
1 tablespoon Fresh ginger, grated
2 ripe Medium mangoes, peeled and diced (about 2 cups)
1/2 cup Chicken broth
1/4 cup Low-sodium soy sauce
2 tablespoons Fresh lime juice
1 tablespoon Honey or maple syrup
1 teaspoon Cornstarch (mixed with 1 tablespoon cold water)
1/4 teaspoon Red pepper flakes (optional, for a hint of heat)
Salt and freshly ground black pepper to taste
Fresh cilantro, chopped, for garnish
Instructions
- Pat the chicken pieces dry with paper towels and season with salt and pepper
- Heat the olive oil in a large skillet over medium-high heat and sauté the onion until soft
- Add garlic and ginger, cooking until fragrant
- Sear the chicken pieces until golden brown on all sides
- Blend diced mangoes, chicken broth, soy sauce, lime juice, and honey until smooth
- Pour the mango sauce over the chicken, bring to a simmer, and thicken with cornstarch slurry
- Adjust seasoning and garnish with cilantro before serving

Chicken breasts can be used instead of thighs, but reduce cooking time.
