Description

Tropical Mango Chicken is a vibrant, flavorful dish that combines tender chicken pieces with a luscious mango sauce, blending sweet, savory, and tangy elements for a delicious meal that's easy to prepare.


Ingredients

1.5 lbs Boneless, skinless chicken thighs, cut into 1-inch pieces
1 tablespoon Olive oil
1 medium Yellow onion, finely chopped
3 cloves Garlic, minced
1 tablespoon Fresh ginger, grated
2 ripe Medium mangoes, peeled and diced (about 2 cups)
1/2 cup Chicken broth
1/4 cup Low-sodium soy sauce
2 tablespoons Fresh lime juice
1 tablespoon Honey or maple syrup
1 teaspoon Cornstarch (mixed with 1 tablespoon cold water)
1/4 teaspoon Red pepper flakes (optional, for a hint of heat)
Salt and freshly ground black pepper to taste
Fresh cilantro, chopped, for garnish


Instructions

  1. Pat the chicken pieces dry with paper towels and season with salt and pepper
  2. Heat the olive oil in a large skillet over medium-high heat and sauté the onion until soft
  3. Add garlic and ginger, cooking until fragrant
  4. Sear the chicken pieces until golden brown on all sides
  5. Blend diced mangoes, chicken broth, soy sauce, lime juice, and honey until smooth
  6. Pour the mango sauce over the chicken, bring to a simmer, and thicken with cornstarch slurry
  7. Adjust seasoning and garnish with cilantro before serving

Notes

Choose ripe mangoes for the best flavor.

Chicken breasts can be used instead of thighs, but reduce cooking time.
