Description

The Tim Walz Hot Dish is a comforting, hearty casserole featuring ground beef, creamy soups, mixed vegetables, and crispy tater tots, perfect for family dinners and bringing people together.


Ingredients

1 tablespoon Olive Oil
1 Medium Yellow Onion, chopped
2 Cloves Garlic, minced
1 ½ pounds Lean Ground Beef
1 teaspoon Salt
½ teaspoon Black Pepper
1 teaspoon Dried Thyme
½ teaspoon Smoked Paprika
1 can (10.5 ounces) Cream of Mushroom Soup
1 can (10.5 ounces) Cream of Chicken Soup
½ cup Milk (whole or 2%)
1 bag (16 ounces) Frozen Mixed Vegetables (peas, carrots, green beans, corn)
1 bag (32 ounces) Frozen Tater Tots
1 ½ cups Shredded Cheddar Cheese, divided


Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13 inch baking dish
  2. Heat the olive oil in a skillet over medium heat, add onion, and cook until softened (about 5 minutes)
  3. Add garlic and cook for another minute until fragrant
  4. Add ground beef, break apart, and cook until browned, then drain excess fat
  5. Season beef with salt, pepper, thyme, and paprika, and stir to coat
  6. In a bowl, combine cream of mushroom soup, cream of chicken soup, and milk, whisk until smooth
  7. Pour the soup mixture into the skillet, add vegetables and ½ cup cheese, and stir to combine
  8. Transfer mixture to the baking dish, spreading it evenly
  9. Arrange tater tots in a single layer over the mixture
  10. Bake for 30 minutes until bubbly and the tater tots begin to turn golde
  11. Remove from the oven, sprinkle remaining cheese on top, and bake for an additional 10-15 minutes until cheese is melted and bubbly
  12. Let rest for 5-10 minutes before serving

Notes

For a vegetarian version, substitute ground beef with plant-based meat or lentils.
