Ingredients
2 tablespoons Olive Oil
1 large Yellow Onion, finely diced
4 cloves Garlic, minced
1 (6 ounce) can Tomato Paste
1 (28 ounce) can Crushed Tomatoes
1 (15 ounce) can Diced Tomatoes
1 cup Vegetable Broth
1 teaspoon Dried Basil
1 teaspoon Dried Oregano
1/2 teaspoon Red Pepper Flakes
1/2 cup Heavy Cream
1/4 cup Fresh Parsley, chopped
1 teaspoon Granulated Sugar
Salt to taste
Black Pepper to taste
1 pound Fresh or Frozen Ravioli
Instructions
- Heat the olive oil in a large pot over medium heat. Add the finely diced onion and cook until softened, about 5-7 minutes
- Stir in the minced garlic and cook for another minute. Add the tomato paste and cook for 2-3 minutes
- Pour in the crushed tomatoes, diced tomatoes, vegetable broth, dried basil, oregano, red pepper flakes, and sugar. Stir thoroughly
- Bring the sauce to a simmer, then reduce heat to low and cover partially. Let it cook for 20-30 minutes, stirring occasionally
- Stir in the heavy cream and chopped parsley. Cook for an additional 5 minutes
- Season with salt and black pepper to taste
- Cook the ravioli according to package directions. Drain and serve with the sauce, garnished with additional parsley
