Description
These Tasty Maple Dijon Chicken & Sweet Potato Bowls combine cubed chicken and sweet potatoes roasted in a maple-Dijon sauce, creating a comforting and nutritious meal.
Ingredients
1.5 lbs Boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
2 medium Sweet potatoes, peeled and cut into 1-inch cubes
1 Red onion, roughly chopped
1 tablespoon Olive oil
½ teaspoon Salt
¼ teaspoon Black pepper
¼ cup Pure maple syrup
3 tablespoons Dijon mustard
1 tablespoon Olive oil
1 tablespoon Apple cider vinegar
1 clove Garlic, minced
½ teaspoon Dried thyme
¼ teaspoon Paprika
Pinch of Red pepper flakes (optional)
2 tablespoons Fresh parsley, chopped (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper
- In a large mixing bowl, combine the cubed chicken, sweet potatoes, and chopped red onion. Drizzle with olive oil, season with salt and black pepper, and toss well
- In a separate bowl, whisk together the maple syrup, Dijon mustard, olive oil, apple cider vinegar, minced garlic, dried thyme, paprika, and red pepper flakes until smooth
- Pour two-thirds of the maple Dijon sauce over the chicken and sweet potato mixture, tossing to coat
- Spread the mixture in a single layer on the baking sheet, ensuring not to overcrowd
- Roast in the oven for 20 minutes
- Remove from oven, flip the mixture, drizzle with the remaining sauce, and return to the oven for another 15-20 minutes until cooked through and caramelized
- Garnish with fresh parsley if desired and serve immediately
Notes
Ensure chicken is properly cooked to an internal temperature of 165°F (74°C).
For a vegetarian version, substitute chicken with chickpeas or tofu.
