Description

These Tasty Maple Dijon Chicken & Sweet Potato Bowls combine cubed chicken and sweet potatoes roasted in a maple-Dijon sauce, creating a comforting and nutritious meal.


Ingredients

1.5 lbs Boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
2 medium Sweet potatoes, peeled and cut into 1-inch cubes
1 Red onion, roughly chopped
1 tablespoon Olive oil
½ teaspoon Salt
¼ teaspoon Black pepper
¼ cup Pure maple syrup
3 tablespoons Dijon mustard
1 tablespoon Olive oil
1 tablespoon Apple cider vinegar
1 clove Garlic, minced
½ teaspoon Dried thyme
¼ teaspoon Paprika
Pinch of Red pepper flakes (optional)
2 tablespoons Fresh parsley, chopped (optional)


Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper
  2. In a large mixing bowl, combine the cubed chicken, sweet potatoes, and chopped red onion. Drizzle with olive oil, season with salt and black pepper, and toss well
  3. In a separate bowl, whisk together the maple syrup, Dijon mustard, olive oil, apple cider vinegar, minced garlic, dried thyme, paprika, and red pepper flakes until smooth
  4. Pour two-thirds of the maple Dijon sauce over the chicken and sweet potato mixture, tossing to coat
  5. Spread the mixture in a single layer on the baking sheet, ensuring not to overcrowd
  6. Roast in the oven for 20 minutes
  7. Remove from oven, flip the mixture, drizzle with the remaining sauce, and return to the oven for another 15-20 minutes until cooked through and caramelized
  8. Garnish with fresh parsley if desired and serve immediately

Notes

Ensure chicken is properly cooked to an internal temperature of 165°F (74°C).

For a vegetarian version, substitute chicken with chickpeas or tofu.
