Ingredients

  • Ground chicken or turkey sausage — 1 lb (approx. 450g)
  • Sweet potatoes, peeled and diced (1-inch cubes) — 3 medium (approx. 600–700g)
  • Yellow onion, chopped — 1 medium
  • Garlic, minced — 3 cloves
  • Chicken broth or vegetable broth — ½ cup (120ml)
  • Fresh spinach — 5 oz (140g)
  • Dried thyme — 1 teaspoon
  • Dried rosemary — ½ teaspoon
  • Smoked paprika — ½ teaspoon
  • Salt — ½ teaspoon (or to taste)
  • Black pepper — ¼ teaspoon (or to taste)
  • Olive oil — 2 tablespoons
  • Fresh parsley, chopped (for garnish) — 2 tablespoons

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish
  2. In a large skillet, heat 1 tbsp of olive oil over medium-high heat. Add the ground sausage and cook until browned
  3. Add the chopped onion to the skillet and sauté for 3-5 minutes until it softens. Add minced garlic and cook for an additional minute
  4. Stir in the diced sweet potatoes, thyme, rosemary, smoked paprika, salt, and pepper, tossing until well coated
  5. Pour in the broth, bringing the mixture to a gentle simmer. Add the fresh spinach and cook until wilted
  6. Transfer the mixture to the prepared baking dish and spread evenly
  7. Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until the sweet potatoes are tender and the casserole is bubbly
  8. Let rest for 5-10 minutes before serving. Garnish with fresh parsley

Notes

Substitutions: You can use plant-based sausage for a vegetarian option.

To enhance flavor, roast sweet potatoes separately before adding to the mixture.
