Ingredients
- Ground chicken or turkey sausage — 1 lb (approx. 450g)
- Sweet potatoes, peeled and diced (1-inch cubes) — 3 medium (approx. 600–700g)
- Yellow onion, chopped — 1 medium
- Garlic, minced — 3 cloves
- Chicken broth or vegetable broth — ½ cup (120ml)
- Fresh spinach — 5 oz (140g)
- Dried thyme — 1 teaspoon
- Dried rosemary — ½ teaspoon
- Smoked paprika — ½ teaspoon
- Salt — ½ teaspoon (or to taste)
- Black pepper — ¼ teaspoon (or to taste)
- Olive oil — 2 tablespoons
- Fresh parsley, chopped (for garnish) — 2 tablespoons
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish
- In a large skillet, heat 1 tbsp of olive oil over medium-high heat. Add the ground sausage and cook until browned
- Add the chopped onion to the skillet and sauté for 3-5 minutes until it softens. Add minced garlic and cook for an additional minute
- Stir in the diced sweet potatoes, thyme, rosemary, smoked paprika, salt, and pepper, tossing until well coated
- Pour in the broth, bringing the mixture to a gentle simmer. Add the fresh spinach and cook until wilted
- Transfer the mixture to the prepared baking dish and spread evenly
- Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until the sweet potatoes are tender and the casserole is bubbly
- Let rest for 5-10 minutes before serving. Garnish with fresh parsley
