Ingredients
2 tablespoons Neutral Oil
1.5 pounds Boneless, Skinless Chicken Breasts or Thighs, cut into 1-inch pieces
1 medium Yellow Onion, chopped
2 cloves Garlic, minced
1 inch Fresh Ginger, grated (about 1 teaspoon)
1 large Red Bell Pepper, seeded and chopped
1 large Green Bell Pepper, seeded and chopped
1.5 cups Jasmine Rice, rinsed
3 cups Chicken Broth or Water
1 (20-ounce) can Pineapple Chunks in Juice, undrained
1/2 cup Low Sodium Soy Sauce
1/4 cup Honey or Brown Sugar
2 tablespoons Rice Vinegar
1 tablespoon Cornstarch
2 tablespoons Water (for cornstarch slurry)
Salt and Freshly Ground Black Pepper, to taste
Optional garnishes: Chopped Fresh Cilantro, Sliced Green Onions, Toasted Sesame Seeds
Instructions
- Prep Your Ingredients: Cut chicken, chop onion and bell peppers, mince garlic and ginger, and rinse rice thoroughly
- Brown the Chicken: Heat 1 tablespoon oil in a skillet, add chicken in a single layer, and cook for 3-5 minutes until golden. Remove chicken and set aside
- Sauté Aromatics and Vegetables: In the same skillet, add 1 tablespoon oil, sauté onion for 3-4 minutes, add garlic and ginger, then bell peppers. Cook for 3-5 minutes
- Add Rice and Liquid: Stir in rice, cook for 1 minute, then add broth and pineapple. Stir to combine
- Simmer the Rice and Chicken: Bring to boil, reduce heat, cover, and simmer for 15-18 minutes until liquid is absorbed
- Prepare the Sauce: Whisk together soy sauce, honey, and rice vinegar. Mix cornstarch and water in a small bowl
- Combine and Thicken: Return chicken to skillet, pour sauce over, add cornstarch slurry, and stir until thickened
- Serve and Garnish: Taste and adjust seasoning, let rest for 5 minutes, then serve hot with garnishes
